Cream of Asparagus Soup

Ingredients

  • 8-10 asparagus spears, steamed soft
  • 1 onion, thin sliced
  • 1 cup asparagus water from cooking
  • 1 ½ cups water
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 2 Tbsp minced fresh parsley
  • Salt and pepper
  • 1 cup warm milk or light cream
  • 1 tsp capers

Directions

After steaming asparagus, cut off the tips and set aside. Combine stalks, onion and both waters in a pot and boil for 5 minutes.
Place mixture in blender and puree. Melt butter. Add flour, stir until blended. Add parsley and whisk in the soup puree.
Cook 5 minutes, stirring. Add salt and pepper to taste and the warm milk.
Put reserved asparagus tips in serving bowl, pour hot soup over and garnish with capers.
Makes 4 servings.
