Avocado Wrap
Ingredients
- 8 whole grain flour tortillas
- 2 cups Guilt-Free guacamole or commercial brand guacamole
- 4 cups mixed salad greens or baby spinach leaves
- 2 large tomatoes, thinly sliced and lightly salted
- 1 large cucumber, thinly sliced and lightly salted
- 1 cup matchstick carrots
- ½ small red onion, thinly sliced
Directions
1. Spread guacamole over ¾ of each tortilla, leaving a ½ inch border around the edge.
2. Top with greens, tomatoes, cucumbers, carrots, and onions.
3. Roll up tightly, slice in half, and enjoy.
Makes 8 wraps
