Breakfast Beans

Ingredients

  • 1 lb. Great Northern beans
  • 6 cups water
  • 1 medium onion, chopped
  • 2 Tbsp light olive oil
  • 1 ½ tsp salt

Directions

Sort and wash beans. Add the water to the beans and bring to a boil. Boil for 2 minutes. Remove from the heat. Let stand, covered, for 60 minutes. Add onion and oil. Bring to a boil and continue cooking on low heat until nearly done, approximately another hour. Simmer beans until very tender. Add the salt. Serve over whole wheat toast.
