Creamy Cranberry Quinoa

Ingredients

  • ¾ cup quinoa
  • 1 ½ cups water
  • ¼ tsp salt
  • 1 cup unsweetened or plain soymilk
  • ¼ cup dried cranberries
  • 1 tsp vanilla extract (optional)

Directions

Put the quinoa in a fine strainer and rinse under running water until the water runs clear. Drain well. In a medium saucepan, stir together the rinsed quinoa, water and salt. Bring to a boil, reduce heat to low, cover and simmer until the water is absorbed, 15 to 20 minutes. Stir in the soymilk, cranberries, and vanilla. Simmer until the cereal is thickened, about 10 minutes.
