Breakfast Rice Pudding (Vegan)
Ingredients
- 2 cups cooked brown rice
- ¼ cup dates or raisins
- ¼ tsp cinnamon
- ¼ cup dried or fresh pineapple chunks
May serve with Rice Dream or Mocha Mix- if you’d like it creamier.
Preheat over to 350 degrees.

Mix ingredients with almond milk (see below) and put in an oiled casserole dish; bake for 30 minutes. Serve warm with Pear Sauce (see below)
Almond Milk
Ingredients
- ½ cup blanched almonds or raw cashews
- 2/3 cup water
- 1 Tbsp honey or maple syrup
Mix ingredients in the blender or food processor until creamy.
Pear Sauce
Ingredients
- ¼ cup blanched almonds or raw cashews
- 1/8 tsp salt
- ½ tsp honey
- ½ tsp vanilla
- 1 can (15 oz) pears
- 1 cup pear juice-from the can, or water
Blend ingredients in food processor until creamy.
