Tapioca Pudding
Ingredients
- 1 can light coconut milk
- 1/3 cup quick Tapioca
- 3/4 cup non-dairy milk
- 1/4 cup maple syrup
- Pinch of salt
- 1/2 tsp vanilla
Directions
Cook all ingredients, through salt at medium heat until it reaches a full boil. When pudding is cool, add the vanilla. Top with fresh fruit
